78 Vinegar To every Gallon of Water, a pound of coarse Lisbon let it boil & keep Skimming it as long as the scum rises; then pour it into Tubs, & when it is as cold as Beer to work, toast a good toast & rub it over with yeast. Let it work 24 hours; then have ready a Vessel Iron hooped & well painted fix'd in a place where the Sun has full power, & fix it so as pot to have every occasion to move it. When you draw it off, then fill your Vessel, lay a Tile on the Bung hole, to keep ye dust out. Make it in March it will be fit to use in June or July let it stand 'till you want to use it & it will never foul any more: But when you draw it off & you find it is not sour enough, let it stand a Month longer before you draw it off. For Pickles to go abroad use this Vinegar alone; but in England you will be oblig'd when you pickle to put one half cold spring Water to it, & then it will be full sour enough with this Vinegar Damson Cheese To a lb of Damson 1/2 lb of powdered sugar, bake them in an oven when done take them out & put them into a preserving pan, keep them stirring till they are quite soft then role them through a Cullender whilst hot then boil them up again till it is of a proper thickness. You may put in the Kernels if you choose. tye the pots close down & keep it in a dry place. Wheelwright
