102 Lemon Cakes 6 ounces of Butter rubbed into one lb of flour one lb of lump sugar beaten with the peel of two lemons grated 6 Eggs half of the whites. mix them with knife not the hand then make them round like gingerbread rut dent a place in each cake with your finger & fill it up with sugar when baked & cold put them into a tin cannister they will keep thus several months flour the tins & add a little more flour then is mentioned about a quarter of a lb. Dont touch them with fingers Potatoe Cheesecakes 1 lb of potatoes boiled & skined beat in a mortar a quarter lb of Butter melted but not oyled 4 Eggs well beaten a little orange flower water the rind of a large lemon boiled till tender & beat with the potatoes sweeten to your taste. put into the pans with puff paste either dried orange peel in thin slices or a few Currants in each pan.
