To make Mead Take 3 pints of honey to a Gallon of spring water, mise em well togeather, & to every Gallon the white of an egge or two being well beat with some of the Liquor, & then mise it with the whole, then sett it on the fire & when the scum is come to a good head take it off, & besure it be very clear from itt, be: fore it boyles, then put one Ounce of white Ginger slised to three Gallons & let the Liquor boyle an hour & a half or two hours with a pritty moderate fire, then
