(90) To Make Elder Wine Gather your Elder-berries in a dry day, when they are full Ripe, and pick them clean from Stalks and green berries, then press them & Strain out the Juice, and to every Gallon of it take three Gallons of Water & pour it on the pulp you Strain the Juice from, and press it over again, and Strain the Water clear from it, and Mix it With the Juice, let it boil for an hour, and keep it Well Skimm'd and to every gallon of Liquor. Put two pound of Sugar, & put in a Lemon Peel, let it boil three quarters of an hour after you put in the Sugar, then strain it off, and when it is cold -
