To Pickle Walnuts-- Take them when a Pinn will go through Them and pricke ym all over wth. a pinn, & throw ym into boyling water, and out of one, into another [eight?] of your waters they must have, and let them be pretty tender, then have yor. Pickle redy boyled with Mace & Cloves & some Pepper, & [slice?] Gingr. one pennyworth of each of those, two Qrts. Vinegr. [for?] one Race Ginger, & boyle yor. vineger & Salt and pouer it hot upon yor. Spices & [illegible] yor. Wallnutts out of ye boyling water and throw them into ye Pickle and keep ym. for yor. use besure ye. Pickle be above ye. Wallnutts Mrs. Clay'es Receipt To Pickle Walnut. Take your Walnuts when a pin will goe through ym. putt in Salt & Watter for nine days. Then [drean?] ym. from it, & put to ym. a strong pickle of yr. Best vingar with pieces you must not Boyl & pickle att all
