(63) To candy & preserve growne Cucumbers or Girkins. Take them after they are [girthed?]. Those that looks very [thear?] & groowne & let them [?] a day in [faire?] water with a little oring flower water or rose water amongst it. Then make a thin syrrup of water & sugar. & let them hang a great height of the fire just to git the warmth of it. but let them hang all the day those [covered?] with a paper. then take them out & put them into a [cleane?] pan & pouer upon them as much clarified sugar as will [touch?] them & give them a heat in it. but doo not let them boile then take them of & let them stand till the next day [covered?] with a paper. & if they be preserved, the next day pouer your syrrup from them & boile it very well & when it is almost cold put them in & keepe them for your use. If you would candy them you must take them out of this syrrup & lay them to drain . & take some fresh clarfified sugar into your pan & boile it candy high. then put them in & give them a good stir. Then take them of the fire & [grain?] it as for other things then lay them upon your [wier?] to dry. doo not let them [have?] [over?] much sugar on.
