(75) To make bullas Cheese Take the best of them & put them into a pot. & tie them close up. & send them to the oven to bake when they bake pys. put nothing in them. then take them out & pulp them thru a seive or strainer. then sweeten it to your taist. & boile it very well. it will take a great deale of boiling. & skim it very cleane. when it is a stif Jelly put it into your pots & keepe it for your use. To Candy Lettice stalks Take your lettice stalks & boile them in water till they are very tender. then weigh them. & to a pound of stalks put a pint of Clarified sugar & boile them very well & when they are Candy high rub them & dry them.
