(85) To make barley broth Take a pound of pearle barley wash it cleane & put to it a good quantity of water. & set it over the fire to Cree & when it is soft put to it about a pound & a halfe of Currans. & a pound & a halfe of Rasins cleane washt & put in a few cloves a little Cinamon & a little mace & let them boile till your fruit be plump. then take it of the fire & sweeten it to your taist & put in a little nutmeg & a dish of butter & a little rose water then stir it very well & garnish your dish with white sugar & Rasins out of your broth.
