(152) To make wood sorill wine Take 4 gallons of water wine measure & 9 pound of fine sugar. let your water & sugar boile & skim it: take it of the fire & let it stand to settle. & when it is cold enough to set yest upon it. take 2 pecks of wood sorill all the rid stalks well pickt of & put 8 spoonfulls of yest to it. & breake in 2 large Lemons with the pill of one & stir it once a day for 2 daies & stop it close for 3 weekes & bottle it up.
