(164) To pickle Cucumbers and Kidney beans [green?] Take them and [illegible] them into water and a handfull of [illegible] salt. Shift them into fresh water for 3 [days?]. Then put them into your pan with some fresh water and salt [illegible] a little [illegible] and [illegible] them over with [illegible][illegible] and a double paper and a [pewter?] plate on a dish that just fits the pan. Hang them over a slow fire a great height where they may just git the warmth and no more of the fire. Let them hang for a day or if they do not [green?] longer. When they are [green?] out them into the pots you intend to keepe them in. Then [illegible] [illegible] [illegible] [illegible] or you think will [illegible] them. [illegible] to it some [illegible] of ginger and [illegible] and [illegible] and some [Jamuiso?] pepper and [share?] some of those spices among your Cucumbers with some [illegible] [illegible] [there?] [illegible] your [illegible] and [illegible] together and pour it hot upon them and [illegible] them to keepe in the steame. Let them stand till they be [illegible] then [illegible] them [illegible] up with [illegible] you may [illegible] Kidney beans the same way. [Only?] take the strings out of them. This is a good way.
