(165) To pickle Cucumbers yellow as they are done beyond sea Take what quantity you please. let them not be too little ones then lay them in salt & water & Eleker for 3 or 4 houres. then take the pot you intend to keepe them in. & lay a laire of bay leaves & a laire of Cucumbers. & strew in a little Jamaica pepper & a few cloves & a little mace. & some fennill seeds on the stalk that grows that yeare then cover them with bay leaves & a laire of Cucumbers & seasoning & seeds untill you git them all laid. then take as much Eleker as you think will cover them & mix it with salt & power it upon them your Eleker must be cold & fresh not that they were wash in. lay something upon them to keepe them downe that they may be covered with pickle. let them stand about a fortnight & then they will be fit for use.
