(174) To make a Calfe head py Take your Calfe head & cleane it. & wash it then halfe boile it & cut it in peices the bignesse of a walnutt. then put into the bodom of the py a little butter & an onion. season the meat with pepper & mace & nutmeg & salt & put in 2 or 3 Rashers of bacon. some hard Eggs & about a gill of oysters a good drop of fresh water & what butter you think fit. & a posy of herbs. & 2 Anchovies & so bake it.
