(208) To make a glaze for a great Cake Take 2 pound of double refined sugar bett & searct & put in steep 2 pennyworth of gum dragon. then put your gum thru a Cloath into your basin. then put in the froth of 3 or 4 Eggs & mix it well together. then put in some sugar & mix it well. then put in 2 spoonfulls of oring flower water & make it very thick & when your Cake is baked. rub the top with a Cloath then put on your glaze & set it into your oven to harden. To make a seed Cake Take 3 pound of fine flower & 3 pound of butter work it well into the flower then put in neare a pint of ale yest & beat 4 Eggs. leave out 2 of the whites with 6 spoonfulls of Rosewater & as much Cream as will make it into a stif paist. mix all well together then set it to the fire an houre to rise. & when you are going to set it into the oven. work in a pound of Caraway Comfits. but halfe a pound of Comfits will doe if you put into your flower halfe a pound of fine powder sugar
