To Make Birch Wine Take 12 Gallons of Birch Water and Boyl 3/4 of an Hour scum it very clean then to every Gallon of ye Liquer put 2 Lb of Sugar Boyl a Quarter of an Hour Scum and Strain thorough a Flannell into a Tubb when it is pretty cold put a Quart of Yeast to it Let it Work 8 or 9 Days then Boyl one ounce of Insinglass in a little Water till it be Disolv'd and when you put ye Wine into ye/e Barrell put ye Isinglass in wt/th Stop if close and give it Air once a Day for 3 or 4 Days together then Keep it 6 Months Then Bottle when you put it into ye Barrll Scum of ye Yeast Stir it Down Eery Day as you Would Do Drink that is Working about ye Middle of March Draw ye Sap
