To Bottle Gooseberries Get your Gooseberries on a dry day the Bottels must be quite dry, peel them and fill the bottels to the Neck, then put in to the bottle a Pint of Spring Water, set the bottles in a Copper of Cold Water it must not be high enough to cover the Tops let them stand till the Water simmers they must not be corkd till Cold then take them out and When quite Cold corkd them tight tye a piece of Leather over them, lay them down on one side in a dry Place as that the Water may touch the Cork
