Quince Cordial Gather the Quinces when ripe & keep them a Week, then (illegible) them & squeeze them through a Cloth, put the same quantity of juice as of (illegible), to each quart of Liquor put 6 ounces of fine sugar, 10 bitter almonds blanched & beat fine- Cinnamon, Coriander Seeds & Cloves of each(?) half a (illegible) beat fine, mix them together in the Liquor, put it into a three Bottle & (illegible) it close, shaking 2 or 3 times a Day for a Fortnight (or longer if you choose) then filter it through blotting paper & bottle it for use- if the Brandy is not sufficiently strong to bear an equal quantity of juice, more should be added to make it agreeable to your taste George the fourth (illegible) (illegible) from a (Reuple?) of the Rev. Alfred hugo suchling- of Norfolk (Woodton Hall) 1 Gallon of English Gin/ from Bumets of Vaux(illegible) 12 ounces of butter almonds (shred fine) the Peels of 6 Lemons cut thin 4 tt of double refined Sugar Note. the Lemon Peel & almonds to be infused for three days in the Gin which should be put (illegible) a Flour Bottle & kept by the Fire- The Bottle must be shook frequently- after three days moisten the sugar with a (1 mall?) quantity of warm Water then add it to the Gin- after the Sugar has been added, the (illegible)
