Soup and Bouillie For the bouillie; roll five pounds of brisket of Beef with a tape; put it into a stewpot, with four pounds of the leg of Mutton peice of beef,about seven or eight quarts of Water; boil these as quick as possible, scum it very clear; add one large onion, six or seven cloves, some whole pepper, two or three carrots, a turnip or two, a leek, two heads of celery; stew this very gently, close covered, for six or seven hours; about an hour before dinner strain the soup through a peice of [desired?] that has been dipped in cold water put the rough side upwards: have ready, boiled carrots cut like little wheels, turnips cut in balls, spinach, a little [tierval?] and sorrel, two heads of endive, one or two head of celery cut on some rivers the stone fly (C) is used naturally. - you will find them underneath stones by sides of rivers. keep them in a box that will admit the air - your line should not be above half as long as your rod with a single strong length of gut (No 6) Draw the fly on behind the shoulders or even bumping the p.t of hook towards the Head - throw gently up stream let it swim down in play it on water - very tender seldom ocatures far from shore - sometimes a push far with
