Receipts Mrs Bethune 1 Italian Cream Take a pint of good Cream the juice of a Lemon and the rine grated sugar to your taste beat it till it is very thick then put it into a clean cloth tye it up like a pudding hang it up in a cool place to drain for eight hours turn it into a dish AMB Glass of brandy added & put into a cream (underlined) cloth 2 [Matoinnony?] Roast three large Apples when quite cold take out the pulp pound and sift near half a pound of Loaf sugar beat the whites of two eggs mix the apples and sugar well together and beat it up with a Wisk one hour
