46. To preserve Cucumbers Green Take small Cucumbers and large ones to cut into quarters to look like citron those with few seed's are best, put them into strong salt and Water in a Stone jar with Cabbage leaves over them to keep them under Water tie a paper over them and let them stand in a warm place untill they are Yellow then take them out and wash them in Cold water set them over the fire to green in salt and Water with Cabbage leaves over them cover your Pan very close taking care they do not boil When quite green take them off the fire and let them stand untill cold close covered then put them in a Water Jar
