Take melons that are not too ripe, cut them down the length way; pare them take out the seeds & soft parts put them in salt water a cabbage Leaf over them keeping them in a warm place 3 weeks. Take them out mash them well & set them over a slow fire, in salt & water. a cabbage leaf over the stew pan - mind they do not boil When they look clear, take them off but keep them in the liquor till cold put them into fresh cold water for 2 days changing the water twice a day to take off the saltness; then take them out & wipe them very dry & cut them in the shape of ginger. - 114. Branen. Mrs Gurny. Take pigs' feet, ear, & tongue. - Singe & salt them with common salt & a small quantity of saltpetre for a day then mash them in warm water put them in a saucepan with a quart
