To make orange wine, Peel your Fruit as free as you can from the white Pith - To the peelings of every five oranges put one Gallon of water - Boil the peelings in the water about ten minutes after they sink to the bottom - strain the liquor from the Peel and when cold add then to all the juice that can be pressed out of the fruit measure your liquor - to every gallon put 3 lb of lump sugar putting thereto a small quantity of New Yeast, let it stand 3 or 4 days in the Vat & then put it into your cask, when it has
