Green Peas Soup 3 lettuces 3 Cucumbers some onions all cut in small pieces 1/4 lb of fresh butter some pepper & salt and a pint of young peas, stewed all together in a saucepan till tender, a qrt of old peas and a sprig of mint put into 3 pints of water and boiled till they will pulp then add the liquor to the former ingredients and boil them once up altogether Mrs Grant [Knole?] Rice Cake 1/2 lb of flour of rice Do of powder'd sugar dried ten eggs half the whites, beat them well and strain them, then beat the eggs and sugar together in a pan and add the rice flour by degrees grate in the rind of a lemon, beat it altogether with a spoon for an hour an half, an hour will bake it in a quick oven
