Milk as neccessary to make the mix base of proper consistency boil in a mould 8 hours, sauce into a 1/4 port of thick melted butter put a table spoonful of powdered sugar a qr of a nutmeg grated a tea spoonful of lemon grass, 2 glasses of Madeira 1 of Cara stir all well before and pour quite hot over the pudding. [[line across page]] To Make Cream Cheese Take one quart of very rich ream a little soured, put it into a linen cloth and tie it as close to the cream as you can, then hang it up to drain for two days, take it down and carefully turn it into a clean cloth and hang it up for two or more days, then take it down and [turning?] put a piece of linen cloth or deep soup plate turn your cheese upon it - cover it over with your cloths keep turning it every day on a clean plate and clean cloth until it is ripe which will be in about ten days or a fortnight or may be longer as depends on the heat of the weather, sprinkle a little salt on the outside when you turn it, if [wanted?] to ripen quick keep it covered with mint or nettle leaves, the [?] made from a quart of cream is [?] c ....?] if [?] longer, they can be be [?], Albany Cultivator
