Ginger Beer. (7). To 10 gallons of cold water put 12 1/2 lbs of lump Sugar with the whites of six or eight eggs well beaten into a pan, stir them well together, when near boiling skim it well, then put in half a pound of white Ginger a little bruised, let it boil 40 minutes then pour it on the rind of 12 lemons peeled very thin; the liquor must stand till nearly cold, then put it into the barrel with two spoonfulls of good yeast and the lemons Sliced without the white rinds and free from Pippins, close up the barrel next day and bottle it in a fortnight. Lemon Cheese Cakes. (8) Half a pound of Sugar, half a pound of butter, seven eggs, leaving out three of the whites, and the rind and juice of two lemons.
