To make Gingerbread (103) (1/4 lb of butter - 1 1/2 lb of Flour, 1/2 lb of Sugar, 1/4 of an ounce of ginger, and 1 lb of Treacle. Boil the Treacle Sugar and butter over the fire until it is well mixed together, and then pour it upon the flour and after working them together for some time make them up with Small bottoms and bake them. - Norfolk Bunch. (104) Take one gallon of Rum and one gallon of Brandy put into the the peels of Sixteen Seville oranges and Sixteen lemons, let the whole stand for three day, closing the vessel lightly.The take twelve quarts of water and nine pounds of Sugar, clarify it with the white of four eggs, let it boil for twenty minutes, and when cold mix it with the Spirits. and the juice of the lemons and oranges which may be previously immersed for a Short time. Put the whole thro' a jelly bag and bottle it off. Cowbit Meat. (105) Sir T. Morton. Take Six pounds of Honey to one gallon of water and a few cloves, boil them two or three hours and when cool enough work the whole with yeast. It Should remain in the barrel four years before it is bottled. Calves foot Jelly .(106). Boil a [tang?] of Calves feet in Six quarts of water till it is reduced to two, then Strain it thro' a Sieve and let it Stand to be cold. Then take off the fat, put it in a pan with a bottle of wine, the rind and juice of three large lemons, the whites of Six eggs well beat you may break and put in the shells and Sugar to your taste, let it boil a quarter of an hour, turn it thro' a Jelly bag till fine. A glass of brandy may be added if you please.-
