Garlick Vinegar (187) Peel and chop two ounces of garlick; pour on them a pint of white wine vinegar stop the jar close and let it steep ten days Shaking it well every day, then pour off the clear liquor into small bottles. Chilie Vinegar (188) Pound and Steep one ounce of chillies in a pint of vinegar - Shalot vinegar is made the same as garlick. Apple Souflee. (189) Peel some apples and cut them into a Stew pan in very thin Slices with a little cinnamon lemon peel, and Sifted loaf Sugar, cover them close and let them Stew till they will pulp thro's a sieve, boil some rice lightly in new milk; when nearly cold raise it up round the dish five or Six inches high and half a inch thick lay a little of the rice at the bottom of the dish and fill it up nearly with the apples beat the whites of three eggs to a high froth, Sift some loaf Sugar and then lay it over the apples, and bake it in a moderate oven 20 minutes Oranges or lemon for Puddings (190) put your oranges or lemon in water the night before, boil them till quite tender, then take the weight of Sugar and boil them well, they will then be ready for use. -
