Water Flower Wine. (208) Boil 18 pounds of sugar in 6 gallons of water for an hour, removing the scum as it rises, have ready picked and tied up in a muslin bag a quarter of pint of elder flower peaps, when the basin is cool put them in add 3 lbs or raisins chopp'd fine and a gill of the syrup or juice of lemons, put to it a little yeast upon a toast, let it work two or three day taking care to stir it twice a day then put it into a barrel adding a pint of Brandy. Bottle it in 4 months - Creamed apple Pie. (209) Make a very nice apple pie with the best puff paste. Bake it in a slow oven with great care, then cut and bake a large star nearly the size of the inside, as soon as the pie is baked cut the lid off and let it stand till cold, make the apples uplenty if not well filled add more apples previously baked, then pour on the apple a rich custard and place it in the Star above round serve this dish up to the table either with or without a spoon Sugar [illegible]. Biscuits - (210) Two pounds of flour, half a pound of butter, half a pound of loaf Sugar, 6 eggs, and milk let the milk and butter be boiling hot Lady Sepuire
