Mince Pies - 229- 2 lbs of raisin, 2 lbs of Currants, 2 1/2 lb apples, 1/4 lb of lemon peel (canded, the peal & juice of 3 lemons, 1 nutmeg, sugar, Salt, a couple of wine glasses of Brandy & 1/2 pint of Port wine, the marrow out of 2 bones all the ingredients chopped separately - Ray livington Lemon Cheese Cakes 230 - 1/2 lb of Butter, 1 lb of lump Sugar broken into small pieces, six eggs leaving out two whites, the rind of two lemons and juice of three, put it all into a pan until it begins to thicken like honey, when cold tie it down in a jar and it will keep three months.
