240 Rice Fritters Mash, and blanch 1/4 lb rice: boil it in milk, by little & little - Season it with Lemon grated fine - Bruise 5 or 6 macaroons & add to it a little orange flower water, and a piece of butter the size of a walnut - The Rice being sufficiently soft, thicken it with the Yolks of three Eggs - without allowing it to boil, pour it out on a flat dish, let it cool, then divide it into Equal parts, roll them into Balls - dip them int Egg, & roll them into Bread crumbs - fry them in boiling Lard & dust them over with Sugar Mrs Rawlinson 241 Those nice little Cheese things, you know? 1 oz grated Cheese - 1 oz flour - 1 oz butter - a little cayenne, mix with an Egg - roll it out, cut it into stripes & bake it - Mrs Rawlinson 242 Apple Cheesecakes 1/2 lb apples grated: 1/2 lb sugar rolled & sifted: 1/2 lb butter clarified; 6 Eggs, leaving out one white, the juice & grated rind of one lemon - To make them plainer, leave out 1/4 lb butter & 2 Eggs - Mrs J.Douerster
