To preserve Melons to be like Ginger Take off the rind of the Melon & scoop out the inside with a silver spoon & put it into cold water & let it stand for 10 days until the water is mouldy over the top of it Then take it out of the water & coddle it till tender, but dont let it boil, - cut it in slices - Make a syrup of sugar & ginger, the Ginger is to be bruised & tied up in a muslin bag) Boil the melon with the syrup every day ten minutes for ten days, at the end of that time throw away the syrup remaining & make fresh syrup with 3 oz essence of ginger & sugar cleared with the whites of 2 Eggs - Pour this upon the Melon & put it into a Jar - 1 lb of sugar 1/2 lb of water makes syrup & the bag of ginger may be also put into it & boiled up to make it strong of ginger - Rock Melons will answer well but the Green Flesh are best Miss Still - 1837 A Charlotte Pudding Butter the dish or mould well - lay slices of thin Bread & Butter in the dish, cover with grated apples then with sifted loaf sugar alternately until the dish be full beat the yolks of three Eggs adding to them a quarter of a Pint of Cream and a little Nutmeg - Bake three quarters of an hour - then turn out Mrs [Glazich?]
