Macaroni Miss Willis A quarter of a pound is sufficient for a party of 8 - put it into a stew pan cover it with cold water let it simmer gently for two hours then pour the water off and add as much cold milk let it simmer for 2 hours and a half longer - add 5 or 6 table spoonsful of grated cheese a little salt & pepper a quarter of an hour before it is served up - it will require to be frequently shaken in the stew pan but not stirred as the spoon would break the macaroni - It is essential that the water be pour off before the milk is added or the whole would become curdled - The macaroni may be put into the stew pan early in the morning to swell as the more tender it is the better Vegetable currie of Fish or Meat - Miss Willis Into a Tea cup of strong gravy put a Table spoonful of Ketchup one of Turmeric, a small tea spoonful of Cayenne pepper and the same of salt and also of Currie powder add this with the meat or fish cut in pieces to a white cabbage & two onions which must first have been shred and fried in butter stew them all together till sufficiently tender send up rice to eat with it - Miss Willis To boil rice for Currie the indian way Take your rice having it well washed & picked & throw it into boiling water with a decent spoonful of Salt let it boil 10 minutes in an uncovered saucepan then holding a plate on the top drain off the water very thoroughly & place the saucepan on a Trivet for a little while before you serve up the rice taking care to give it an occasional shake
