An excellent currie Powder - Miss Willis 1 oz and 1/2 Coriander seed 3 drachms Cardamoms 3 do Cummin 6 do Turmeric 6 do Black pepper 2 do Ginger 2 do Mace 1 do Cloves The whole to be rubbed to a fine powder more than the above should not be made at a time as the fresher it is the better - Keep it in a bottle closely corked in a dry place To hash meat very nicely Miss Willis Cut the meat thin flour it & sprinkle a little salt & pepper over it a little onion shred put it into a stew pan with a teacup full of cold gravy and shake it well - merely simmer it to heat thoroughly for if doing too long the meat will become hard having been previously dressed a small tea spoonful of Ketchup may be added If there should not be any gravy some may be obtained by chopping the bones of the meat small & simmering them with a little salt and water -- Miss Willis A very nice substitute for preserved or fruit Tartlets - A fine Carrot grated fine. The yolks of 2 Eggs a little sugar A bit of butter about the size of half an Egg which must be melted. A little lemon juice & a bit of lemon peel grated. These ingredients to be well mixed & put into a thick paste in patty pans. They may be baked in a dutch oven -
