Beef Tea Take 1/2 lb of lean Beef chop it as small as mincemeat - put it into a stew pan with three quarters of a pint of water cover quite close with the lid & set it so near the fire as to take 40 minutes to boil - let it then simmer five minutes & strain thro' a seive - To bottle Gooseberries Gather them when quite green & dry (the rough red are the best) pick them & rub them in a dry cloth - fill wide neck Bottles quite full cork them very close & set them up to their necks in cold water. Set them over a fire in Fish kettle of cold water & let it heat by degrees until near boiling - the gooseberries will look coddled. Take them out of the water & stand until next day - then seal them or tie them down with Bladders Barley Water 2 Table spoonful of Pearl Barley to be well washed - The rind of 2 Lemons boiled in 3 quarts water Loaf sugar to sweeten - boil 20 minutes & pour over the Barley -
