Orange Brandy Take a gallon of right brandy 2 dozen of Civill oranges peels which must be pared so that you leave no white, then put your peels into the brandy, stop it down close, and let it stand 2 or 3 days, then power your brandy from them and take the peels and put into 6 quarters of spring water with 2 pounds of double refin'd sugar, then set them on the fire, and set it by to be quite cold then put power it together, put in a bottle to perfume it, a grain of musk, the same way make lemmon brandy.Merole Brandy. Take a pound of merola cheries, after the stones is out, and put them into a quart of Nance brandy with halfe a pound of double refind sugar, cover it close let it infuse in the sun a week, make chery brandy the same way but dont stone them and single refind sugar will doe. Raspberry Brandy Take a gallon of Nance brandy 4 quarters of rasberries let it steep 3 days then strain it and put a pound of loafe sugar to it, when it is dissolved bottle it up for [illegible]. Damason Brandy Take 2 gallons of brandy and halfe a peck of damasons, but them in their pices, and put in 2 ounces of cinamon, one nutt-megg grated with half a pound of sugar.
