To Make Ratifia Take a hundred of apricok stones, break them and take out the kernels, peel them, and put them into a gallon of right Nance brandy, let it stand 2 months in a glass jar or bottle to infuse, then rack it of and put to it a pound of double refind sugar, and let it run through a swans skin gelly bagg, then bottle it and you may drink it in a fortnight. Spirit of Oranges. Take the pareing of 200 Civill oranges and also the juice Put to 12 quarters of right Nance brandy keep it all together in a stone pott corke it very close and tye a leather over, let it stand so a week or fortnight, then distill it in an ordinary, pasted down close, and keep cloth about the still, [illegible] a quart of the smallest and put to it about 2 pound and halfe of double refin'd sugar, and the pareing of 3 or 4 oranges and boile it with the sirrup, sweeten all the water and mingle it together and then put it into a great bottle for a week, then power it into qart bottle and tye them close, set them in a close place Orange Water. Take 2 quarts of white wine the same canary 2 pounds of right Civill oranges peel, wipe them clean and steep them in fair water, to take of the bitterness 12 hours, then dry them well in a cloth and put them in the wine 24 hours Then still them draw them of gently with a slow fire, and put into sack bottle you draw them of in a ounce of white sugar candy, keep the first by it selfe, and mix it in a broad earthen pan with the second to what strength you please, don't mix it too small, sweeten it to your tast, with doubl refin'd sugar, and if you still it of the best brand it well be stronger, and keep longer. Orange Water Take a dozen of the fairest Civill oranges, pare the rines very thin in little bitts, pare them as long as any oyly substance is therein, then steep the pareings in 2 quarters of the best Canary, and a pint hand half of the best Nance brandy let it stand 2 or 3 days then put it into your still, past it down close, and let it still with a soft fire sweeten it with double refin'd sugar, let it drop into a bottle and put it up into another, set it by for [illegible].
