65 Sirrup of Vinegar Take 5 Pounds of Sugar, Clarrify it in 9 Quarts of water on a Soft fire, Scim it very well, then putin 3pintsof the BestWhite Wine Vinegar and boil it to a Sirrup. Take to every gallon of water one gallon of honey, let your honey be melted before your water be too hott, le it be the Best honey you can gett, then put in an egg, and when your Egg comes up half way in the water, which you must feel with your hands, then it will be strong enough, for it will Be much stronger when its boild and you must boile Those herbs in it, 4 or 5 spriggs of thime, as many of sweet Margorum, a sprig of winter favory, a good deal of sweet Brier, and almost as much Bay, tye all these up together With a thread, being a great hand full, it will Serve to boile in 80 gallons, then make a quick fire and let it boile halfe an hour, and no more, then take it of the fire, and set it a broad in 2 or 3 wooden Vessells, and let it Stand 24 hours Without Stirring, then Softly draw it out, leave the dreggs behind, then put the clearsst into a Vassell, with a bag of Spice and if your Vessell hold 80 Gallons, put in about 5 races of Ginger, the out Sides par'd away, 2 Nut-megs, and 4 Peny Worth of Cinamon, a little Mace and a few Cloves, bruise them a little but not too much, then put them into a bag, and put It into the Vessell it's made in. You must make it at Michaelmas and not to be drunk till lent, when its drawn Put into it an Egg into the Vessell to try the Strength of it, it Must bear the Egg no brader then a ponny, and if you find It too Strong, you must mix Some Smaller with it, when Its cold and Scim'd very clean, as long as any Scum risses. Take 90 Gallons of Water, and let it be Just a boiling, then Put to it a Quart of the best honey, and a pound of powder Sugar, let it boile till the Scum rises, then Clarrifie it with The Whites of 30 Eggs well beaten before you put them in, Then take them of the fire, and put it into a Earthen pan,
