67 Into it a great handfull of Sage, and to every Gallon of Water a little Ale yest to make it work, So let it Stand 4 or 5 days Stirring it together 2 or 3 times a day, Then Strain it out and put it into you Vessell, and let it Stand about 6 Weeks then bottle it up, Cork it down, and Set it In your Celler. Orange Wine. Take 6 Gallons of Spring water, and 12 Pounds of Single [find?] Sugar, and the Whites of 4 Eggs very well beaten, and put into the water and Sugar cold, then let them boile 3 Quarters of an hour, Scim it as long as any Scum will rise, then Take it of and put in 6 Spoon fulls of the besoale yest, And 6 Spoon fulls of Spirit of Cittern, and if you cannot get Sirrup of Cittern Sirrup of Lemmon must doe, then beat It together, and take the juice of 50 right [Cwill?] Oranges, Take the rines of half of them clean from the Whites, So let those work together, 2 days and nights, and put in 3 Quarts of [Rhenisk?] wine, So turn it up close and let it Stand in the Tubb 14 days, and bottle it and twill keep a year, a Gentile Wine. Cowslip Wine. Take 9 Gallons of water, 14 Pound of Powder Sugar which You must boile well together for the Space of an hour having Put to it the Whites of 6 Eggs well beaten, Scum it very Well all the while then put it into a tubb, take a bushell Of pickt Cowslips, and beat them in a Morler, and put the Sugar next day, Strain it out and Squeeze it hard, then take The best new Ale yest you can get, and make a hard brown Toast, and Spread it on both sides very thick and put it In to work, and when it has done working put it up and Let it Stand 3 Months in your Vessell, before you bottle It, put a Lump of Sugar into each bottle, Primrose wine Make the Same way, but its not So good, nor so Strong. Quince Wine. Take ripe Quinces, Grate them and put as much as you Think will be Strong enough for 6 Gallons of water Then let it Stand to be clear Shifting it out of one pan Into another, and take the bottom and put into a Kittle Let it boile and [illegible] it with the Yolks of 6 Eggs, Then let it Stand to be Almost cold, then put it to 12 Pounds of Sugar, and when its quite cold mix the boil'd
