Half a Pound of Currants, as much Sugar as will Sweeten it, Then take a good Quantity of Spinnage, let the boile before you Put it in drain it well, butter a dish, lay puff past round it, And in the bottom, bake it not too much.__..__..__..__ To Season Cheese Caks. Take a Quart of New milk warm from the Cowe, Set it with Runnet, as Soon as it comes, Strain the whey from the Cruds, Rub it through a little [illegible] with the back of a Spoon, Season it with a Quarter of a pound of Cloves and Mace beaten, a Little Salt, half a pound of fine Sugar, a little Rose water, halfe A pint of Sack, half a pound of butter melted, beat in 6 Eggs Leave out half the Whites, put in a pound of Currants, and [illegible], the Same ingredients for Rice Cakes, only you must Boile the Rice tender, the Same for Allmond Cakes only blanch the Allmonds and beat them in a Stone Morter, with a Glass of Sack, Orange flower or Rose Water.__.__.__.__ To Season Custard. Boile a Quart of Cream with 2 or 3 blades of Mace, a little Nut=meg Sliced, then Strain it and Season it with half a pound of good Sugar, a little Sack, Rose water, then beat 2 Eggs, 4 Whites Harden the Crust in the Oven, before you fill them.__.__ Past Royall. Take a Pound of fine flower, put in a little Cinamon and Nut=meg, beaten fine a Quarter of a pound of double refined Sugar, beat in the Whites of 10 Eggs, then make it into a past With half a pint of Sack, the rest Cream pretty Stiff, then Role in a pound of Sweet butter, at 5 or 6 times roleing, and its fit for [Tar?] Orange pudding, Spread Tarts or Lade Tarts.__ White Puff Past. Take a Pound of flower put in the Whites of 3 Eggs beat up to a Snow, make it into past with cold water, then role in a Pound of butter at 5 or 6 times Roleing, and it's fit for Taffity Tarts, or Cheese Cakes, in the Winter beat your butter to makeIt work, and in the Summer keep as cold as you can.__.__.__ Standing Past. Let your Liquor boile over the fire, put in the butter after the rate of 2 pounds to a [illegible], then take it of and make your past very stiff, role it in a Clean Cloth to Sweet, then raise it.__.__
