One a Clock, and cut in a half peny Loafe in 4 or 5 pieces and put into it, then take 5 Yolks of Eggs beat them very well and Stirr them in your Soop, put a little of the Liquor into the Eggs before You put them into the dish for feare it [illegible], with a little Salt, garnish your dish with grated crust of bread. Brown Soop. Take a Large Neck of Veal, a Neck of Mutton, halfe a Pound of Midling Bacon, a Blade of Mace, [2 or 3?] Cloves, a pretty deal of whole Pepper, and Salt, a bunch Of Sweet herbs, an Onion, let them boile gently in a Little more water than will cover them, and when All the goodness is boil'd out take it up and strain The broth from the Meat, and cut 2 Pound of lean Beef into pieces, beat and flower it, and put a piece of butter in the pan, and let it boile and fry brown Then put in the Liquor you straind from the Meat, And you may put in 2 wild Ducks, which you must More than half roast, and when they are enough, place Them in the middle of the dish, Serve it, And if for White Soop you put in 2 Young fowles [illegible] up theier Skins, and Stuff them with force meat balls, and Beat the yolks of 3 or 4 Eggs, with half a pint of Cream when you take it up, Stirr it in, put in a little Fryed Crisp bread, and if for brown Soop, put in Cocks Combs, Pullets and Sweet bread pull'd in pieces, [illegible] All and [illegible] if you can gett them, Garnish with hard Lettice.__.__.__.__.__.__.__ Good Soop. Take a Legg of Beef a Nuckle of Veal, the fat end of a Neckof Mutton, chop them all to pieces, and make broth of them, with a crust of Bread, then cleare the broth from The meat, and put it in an Earthen pott, put in a Pint of White wine, a bunch of Sweet herbs, a good Store of Spinnage, then take a hen larded with bacon And boile it in the broth, and when its enough power The broth into a dish, with the juice of an Orange, and Beat as many yolks as will thicken it enough, keep Them Stirring about for fear they Should candy, place the fowle In the middle of the dish, lay in some [illegible] power brothe over it and Serve it, with Lemmon and flowers.__.__.__
