To make almond Cheese Cakes Take the peel of a large Lemmon Boil it till it is very tender shift the water, once or twice when the peel is boiled enough beat it very well in a marble Mortor put to it a qr. of a pound of almonds blanch. [?] stired in a quart of fine powder sugar beat it all together till [?] almonds are very fine then put to it four eggs leaving out two whites squeeze in the Juice of a Lemmon and pour in a quartor of a pound of Clarified Butter and two spoonfulls of Orange Flower water mix & beat it all very well together so put it into your Pans half an hour will bake it, You must strain your eggs Lemmon Juice & Butter through a Hair Sieve To Pickle Red Cabbage Take a Red Cabbage & Shred it in very thin slices season it with Pepper & Salt pretty well let it lye all night upon a broad tin or dripping Pan: Take a little alegar put to it a little Jamaica Pepper & two or three [?]afes of Ginger boil them together & when it is cold pour it upon your Cabbage [?] in two or three days it will be fit for use If you please you may throw a little colliflower in amongst it & it will turn Red
