To make White Elder Wine To 20 Quarts of Water, one peck of Berries boil it half an hour, Scum & Strain it off then put in two & half pounds of Sugar to every Gallon of Liquid, when it is Milk warm, put in 3 Spoonfulls of Yeast, Let it Stand two Days then put it in the Barrel, when it has done working, add 1# of Chopped Raisins to every Gallon of Wine. The Berries must be Squeezed or you will not get the best of them. To make White Elder Wine - Miss Whitehead Three pints of Berries to 1 Gallon of Water & 3 pounds of Sugar to 1 Gallon of Liquor, Boil the Berrys 20 Minutes, Strain them & press them gently, Boil the Liquor & Sugar half an hour, scumming it well all the time, work it up with toast & Yeast 2 or 3 days. - You may add a little Ginger and a few Raisins - Swill the Cask with Brandy
