How to Make Calf foot Gilly 19 Take one gang of Calf ffeet, boyl them as for ordinary use, take two Gallons of watter it must boyl to one Gallon, soe put it into a Bason & lett it stand all night ye next morning take of the top and leave the bottom put it into a pann & put in one or 2 nutmeggs two or 3 sticks of sinament a little Lemmon peill a little salt one sprig of Rosemaire a Gill of sake, a quarter of a Gill of smiple sinamon watter, soe set it one the fire lett it boyle, then take 14 whits of eggs beat them, then take the juce of 8 Lemmons in amongst ye Eggs & as much suggar as yo think fitt soe put in yo. Stuf softly lett it boyle a quater of an hour soe take it off & as yo put it into the Bagg you must heat it To Make a Saygo Puding. 20 Take a quarter of a pound of saygo boyle it in watter with a stick of sinamon till it be tender shifting yor frist watter If it be red yo must lett it boyle till it be as thick as for rice puding yn take 4 eggs well beat two or 3 spoofulls of cream a little
