Stew'd Lamb 23 Take a Loyn of Lamb cutt it in slices strow flower nutmegg and salt & a little peper upon it put it into a frying pan with some butter and fry it brown but lett it fry Slowly for fear of burning yor meat & butter when it is enough take it up & put it into a stewpan & have ready some hot watter & put as much into yor frying pan as yo think will stew yor meat amongst ye butter it was fry'd in & lett it take two or 3 good boyls then put through a hair sive & put it amongst yor Lamb with an onion & a bundel of sweet hearbs & a bagg of seasoning so lett it stew & put in a spooful of Eldervinegar & a little Lemmon skin & Sprowgrass or Hartechock bottoms so serve it up. You mst make a fricase ye same way only yo must shard yor hearbs & strow ym one before yo fry it & put in anchoive. To make Suggar Cakes. 24 Take 1 lb of Butter wash it in Rosewater tell all ye salt be out of it then take one pound of fine flower well dry'd beat yor flower and butter together with biskett beaters very well, then take one pound of Loaf Sugr finly beaten & searest
