in a week or ten days or sooner, a till may be laid lose on the bung hole, and in another week or there about according as you see the abetting of the buzzing the bung hole should be koped up with a cork & cleay over it to keep close and tight, but there must be a peg hole on ye top of the wesel to give it air now and then till the ferment is quite over which must be looked and opened and shut once or twice as day as oeakon shall show when you perseve it will settled, koop up the vent for good and all; your vessel should be very strong and tight and [illegible] kops it will keep as long as you please, a small vessel may tap in three months, but a hogshead may stand, and is the better it stand a year when you tape it, it must be two low else it will be very free for it has mayless. NB You may put more of the elder then is directed
