To Make Elder Flower Wine To 10 gallons of water 30 pound of loaf sugar boil it and scim it well, 16 pound of raisins in the sun: stone them when the water is almost cold power it upon the raisins add half a peck of elder flowers full measure 8 spoonfulls of good yest stir all these together let it work 5 or 6 days put it into your vessel clean from the flowers then put in 3 gils of surop of lemmon in 2 or 3 days clay it up in 8 months you may bottle it of. Take care the vessel be full. To Make Raisins Wine Boil soft water with a handfull of sage strain it let it stand till new milk warm then to every gallon put six pound of Mallaga raisins pickt and shred small, stir it well together for six or seven days. Then strain throw a cater bagg dipt in melted sulpher light and hung in the cask. Then put in the wine stop it close for 6 months but better if a year, if you make a great quantity. After this wine has stood six months you may draw it off into a clean cask and add a pd of sugar to every gallon but if ye raisins be good there is no occasion for this
