Muffins Beat up three whites of eggs to a froth put to them one spoonfull of good yest & beat it again till it be well mixt then put to it a gill & half of milk new milk warm add half a quarter hoof of flower stir it altogether & beat it well with a stick and let it rise an hour, then flower a wooden spoon & drop ye cakes upon a board well flowerd and rol them a little & [shuf?] them upon yr girdle not too hott
