62 To Make Vinegar from the Vinegar Plant Get a large brown or white pan or basin about 1/2 a yard across the top. Boil 5 pints of water - Pour it over 1/2 a pound of brown Sugar and 1/2 a pound of Treacle. Stir it well and pour it into the pan. When cold, lay the plant flat on the top - Cover the pan with a piece of brown paper with holes made in it with a fork. Do not tie it but just squeeze it round to prevent its coming off. Leave it in a dark but not hot closet. In six weeks or seven the vinegar will be fit for use. Take off carefully what is clear and strain it. Strain what is not clear through a jelly bag till is clear. The same plant will do a second time, at least, but there will be a young one formed under the first, which may be detached and set like the first.
