To make Lemon Wine Mrs Bowes 11 Take six gallons of Water the Whites of eight eggs beaten, Fifteen Pounds of Loaf Sugar boil them three quarters of an Hour and skim it well when cold, Put in the juice of 5 dozen of lemons if large or less quantity will do, the juice to be strained before it is put to the liquor with the pealings very thin pared, six spoonfulls of yeast one quart of Brandy, one ounce of Isinglass cork it up close and let it stand six weeks Red Goosberry Wine Mrs Wray Take two pecks of goosberry bruise them & put them into a tub with four Gallons of water let them stand one night and day strain out the husks to every gallon of liquor put three pds and half of sugar put it into the cask, take one quarter of an ounce of Isinglass cut it in peices & beat it whilst it be soft put to it a little of the wine and let it stand within the air of the fire till it be disolved take the whites of two eggs and beat them very well to a froth put them to the Isinglass then put them into the Barrel lay it close and let it stand four months then Bottle it
