Potato or Lemon Cheesecakes Take 6 O of Potatoes, 4 Oz of Lemon peel, 4 Oz of sugar 4 Oz of butter, boil the Lemon peel till tender - pare & scrape the potatoes, &c boil them tender & bruise them; beat the Lemon peal with the sugar then beat all together very well & mix all together very well. and let it lie till cold. put crust in your pettipans, and fill them little more than half full, bake them in a quick oven half an hour Sift some double refind sugar on them as in to the oven, this quantity stand 24 hours longer without covering then salt is as before. turn it and let it stand 24 hours longer. then take it out. and set it on a board. turn and wipe it twice a day. If it is likely to bulge out in the middle pin a Cloth tight round it from the Top to the bottom. but it must be taken of every day. and a clean dry one put on again till the Cheese is hardened. The Vat to be 8 Inches in Diameter and 12 deep. June 20th 1805. Furniture Oil - 1 pint of Linseed oil, 1 oz of Alknet root a little rose [illegible] mixt it together and let it stand for 3 days stir it up every day and then boil it. put it into a bottle for use. rub it well in.
