To Make Egg Cheese Set a quart of new Milk upon the fire, till it is as warm as from the Cow; stir it into six Eggs well beaten and sweeten it to your taste set over a slow fire stirring it till it begins to curd, put in the Juice of half a Lemon put the curd gently into a mould which will hold the quantity; it must be set hollow to let the Whey strain through the holes of the mould let it stand all night then turn it out into the middle of your dish and pour a custard round it. To Make [Cohac?] Mrs Hutton Clifton Take either Beef Mutton or Veal chop it small with fresh Suit put grated Bread & Egg to it: season it to your taste with mace nutmeg Pepper salt & Lemon peel bake it in an oval dish & it will turn out. serve it up with strong Gravy add a Broiled sweetbread on each side of the dish for Dinner or a Top dish for supper. Stewed Bump of Beef The Beef being cut a neat size place it on a Tin fish strainer the size of your Kettle which must be supported about 3 inches from the bottom of the pan. Then grate one Nutmeg & mix it with a proportion of Salt with which rub your Beef very well all over - then pour one quart of water into the place in which you must have one slice of shalots place
